Hoto (ほうとう) is a regional dish from Yamanashi Prefecture in Japan, consisting of thick, flat noodles simmered in a miso-based broth with various vegetables.

The noodles resemble udon but are wider and flatter, often cut directly into the pot, resulting in variations in thickness and shape, contributing to a unique texture.

Typical ingredients include pumpkin, onion, cabbage, and green onion, but mushrooms, carrots, and other seasonal vegetables can also be added. Some variations include pork or chicken.

Hoto’s warm, miso-flavored broth makes it a perfect dish for colder months. It is widely available in restaurants throughout Yamanashi Prefecture and is also a popular homemade dish.
