Jigokumushi is widely practiced throughout Oita Prefecture, known for its abundance of hot springs, particularly in Beppu City, especially in Kannawa Onsen. The steaming pot used in jigokumushi can be made of bamboo, stone, or iron, and is designed to trap the steam inside. Ingredients such as vegetables, seafood, and meat are placed in baskets or sieves and then into the pot, where they are steamed using the natural heat and steam from the hot springs.
The steam is said to impart a unique flavor to the food, and the high temperature ensures that the food is cooked quickly and evenly, retaining the nutrients and flavors of the ingredients. Jigokumushi is considered a healthy cooking method and is a popular culinary attraction for tourists visiting Oita.
